New Recipe: Smores Ice Cream Pie


At dinner at Wildfire on Saturday we got one of their new desserts, a smores pie. I was really excited because I love all things smores, but was kind of disappointed with it. It was too cold and the marshmallows on top were cold and should have been warmed up. So I decided to make my own version for Sunday dinner dessert. They were really yummy! The only change I would make next time would be to make them in a different pan. They make small foil pie tins and I think those would have worked better.

Ingredients - For 2 small ramekins


1/4 cup graham cracker crumbs
2 tbsp butter, melted
1 cup ice cream - your choice of flavor, I used smores flavor from Edy's
1/2 cup marshmallow fluff
3/4 cup mini marshmallows

Directions
1. Preheat oven to 375.
2. Put half of graham cracker crumbs in each ramekin. Add have of melted butter to each ramekin. Mix butter and graham cracker crumbs and press along bottom and up the sides of the ramekin.

3. Bake for 8-10 minutes until golden brown. Put ramekins in the freezer to set the crust for 30 minutes.

4. Add 1/2 cup of ice cream to ramekin and put into freezer for 2 hours to harden.

5. When ready to serve, take ramekins out of the freezer, spread the tops of each ramekin with marshmallow fluff and then sprinkle with mini marshmallows. Let sit for 5 minutes to soften the ice cream.

6. Use a kitchen torch to toast the marshmallows, you could also put under your oven's broiler for only a minute or so.

First trip to the zoo!

On Friday, Ethan went to the zoo for the first time! Arla and Teddy have a membership there so she invited us to go and walk around. I haven't been to Brookfield Zoo since I was a kid so it was fun to go back. It was such a beautiful day too so just being outside was nice. We saw a lot of animals and of course had to go to the giraffes first so Ethan could see our favorite animal! It was a great day, I think Michael and I are going to get a membership too so we'll be back soon!

Weekend Recap

We had a really fun weekend. On Friday I met up with my sister and Lily at Brookfield Zoo. It was a beautiful day and it was so nice to be outside. I'm doing a full post with lots of pictures tomorrow but here's one of Ethan and I.


We had fun at the zoo and headed home in the early afternoon so the babies could eat and nap. After Ethan's nap he gave me the best surprise, a big gummy smile!


After Michael was done with work we ordered a pizza and dined alfresco on the deck. It was a beautiful night. We just relaxed and sat out there for a few hours.



On Saturday we were up early, had some breakfast and then I headed out for a hair appointment to get my hair colored. Mama needs to cover up those grays! After my hair appointment, we gave Ethan a bath and got him ready to head to my sister and Teddy's house to celebrate my Dad's birthday and Father's Day.



On our way to my sister's we stopped for lunch in Wheaton at Shane's Deli. It's a small, place but we heard they had amazing sandwiches. When we got there, there were about 20 people in line ahead of us so we figured it had to be good. Well it was, we are already dying to go back. I think we'll be having a lunch date there this week! They have a bunch of different sandwiches and paninis or you can make your own. Michael had a turkey and salami sandwich and I had their pollo pesto sandwich, it was so yummy!



After lunch we headed over to Arla and Teddy's. We hung out for a few hours, played with the babies and my dad opened his gifts.







We got him a new ladder that he's been wanting. Even though it means more work, he was excited! After opening gifts we headed to Oak Brook and Wildfire for dinner. Dinner was so good and we ate way too much! After dinner we headed home. It was another gorgeous night so we hung out on the deck for a couple of hours, it was nice and relaxing.


Sunday morning we laid in bed for a couple of hours before we got moving. We got ready and then headed to breakfast at our new spot in downtown Wheaton, Egg'lectic Cafe. After breakfast we headed to the grocery store to pick up what we needed for the week and headed home. I did some cleaning around the house, Michael did some work and then made us lunch later. Ethan was busy too, busy making music on his piano playmat!



The rest of the day we just relaxed, watched a movie and some of the Olympic trials. For Sunday dinner Michael made delicious BBQ baby back ribs, cheesy potatoes and a salad.



I made a new recipe for dessert, individual smores ice cream pies! I was inspired from a new dessert at Wildfire. They were really yummy, recipe to come this week. The best part about the dessert was torching it before eating it. Who knew it could be so much fun!





Another great weekend in the books. I hope all of you had a great weekend as well. I can't believe our weather coming up this week, it's going to be hot, hot, hot come Wednesday and Thursday. It's rare we see 100 degrees in the forecast, this summer is crazy!
