Family Favorite Recipe: Takeout Fried Rice & Sesame Chicken




This past weekend we had a taste for Chinese food, but it's not good for you and honestly I like our recipes better! We've honestly been working on our fried rice recipe for a few years. It's inspired by both Benihana and our favorite fried rice from Sushi Kushi Toyo. We don't like a lot of soy so it's much lighter and less salty than most takeout places. If you like a lot of soy, you can always add more. The sesame chicken is delicious as well. The sauce recipe makes a lot and it is so flavorful.

Fried Rice

Ingredients
4 tsp Sesame oil
2 eggs, beaten
1/2 Cup chopped onion
1 Grated carrot
1 Cup Chopped Snow Peas
4 cups steamed white rice (2 Cups uncooked Rice)
2 cups chopped cooked chicken breast or Pork Tenderloin
1 tsp sesame seeds
3/4 tsp salt (optional)
1/4 tsp black pepper
3 tbsp butter
1 or 2 tbsp reduced sodium soy sauce (More or less to taste)

Directions

1. Cook rice the night before and then spread it out on a cookie sheet to let it cool overnight uncovered in the refrigerator (This is the most important step!)
2. Cook Chicken or Pork, chop into small pieces and set aside.3. Heat a 12-inch nonstick skillet or wok over medium heat. Add 1 tsp of oil and scramble the eggs until firm. Remove from the pan and let them cool; then chop the eggs and reserve.
4. Meanwhile, add the remaining 1 tbsp oil to the pan, and raise the heat to medium-high. Saute the onion, Snow peas, and carrots until tender - about 2-3 minutes. Mix in the rice, chicken, and chopped eggs. Add the sesame seeds, salt, and pepper stirring well. Add the butter and soy  sauce to the mixture, stirring until well combined.


Sesame Chicken

Ingredients
3 boneless chicken breasts
1/2 cup water
1 cup chicken broth
2 tbsp mirin (rice wine vinegar )
1/4 cup 
cornstarch 

1/2 cup sugar
2 tbsp reduced sodium soy sauce
2 tbsp sesame oil 
2 tbsp sesame seeds

Directions
1. Prepare chicken - we use a beer batter and do a light pan fry in sesame oil. You could bread and bake them to save calories as well.
2. While chicken is cooking prepare the sauce. Combine all of the ingredients in the list above except for the chicken and sesame seeds. Place the sauce in a small pot and bring to a boil, stirring often. Turn heat to low-medium once it comes to a boil. You will see the sauce begin to thicken, which is what you want.
3. Once your chicken is cooked, put in a bowl and pour desired amount of sauce over the chicken and sprinkle with sesame seeds.
4. Enjoy!
