New Recipe: Chicken Spinach Burgers


I found this recipe on Pinterest and thought it would be a great make ahead meal option for lunches for me. They have great flavor and filled with lots of good for you ingredients. They are only 160 calories and they taste more indulgent than 160 calories believe me. They are great for kids too because it's a good way to sneak in some veggies into something they know and love. Ethan eats very little meat and even he liked these.

Ingredients
1 1/4 lb ground chicken breast
2 oz fresh baby spinach 
1/2 small onion
1 small clove garlic 
2 stalks green onion 
1 TB fresh parsley leaves 
3 oz shredded aged white cheddar 
2 tsp balsamic vinegar 
1 tsp lemon juice 
1/4-1/2 pepper 
1/4-1/2 cup bread crumbs 

Directions
1. Preheat oven to 425 degrees
2. Wilt your baby spinach by pouring boiling water over it while in a colander in the sink.
3. In a food processor place onion, green onion, garlic, parsley and wilted spinach. Pulse until it is fairly fine but you don't want puree. 
4. Combine with chicken and remaining ingredients adding enough bread crumbs to make it stick together but not to your hands. 
5. Form into patties and place on a well sprayed sheet of foil on a baking sheet.
6. Place in oven and cook for 7- 9 minutes on each side.
7. Enjoy!
