Kid Craft Friday: Valentine's Foam Crafts

Ethan loves crafts and really loves stickers. I was in Michael's one day getting some supplies for my Etsy store and saw a fun Valentine's foam house kit. After creating his foam igloo, I knew it would be something fun that he would enjoy. I also picked up a foam heart wreath and some glitter heart stickers to make a wreath. I love fun and easy crafts like these to keep Ethan occupied during what is quickly becoming the worst Winter ever!

First up, the foam heart wreath!

Stickers!

All done!

Admiring his work!

I get to look at his masterpiece while I'm in the kitchen!

Next up was the foam Valentine house. I built the framework of the house and then let Ethan do all of the decorating with the stickers. It came out really cute and Ethan loves it! He keeps carrying it around the house and playing with it.

Super Bowl Eats

The biggest football game of the year is this weekend! We have hosted a Super Bowl party the past few years but decided not to host this year. However, we are still going to make appetizers for dinner that night for fun. I did a post last year about a bunch of healthy options. I plan on making the skinny buffalo chicken bites from that post because they were so good. I scoured Pinterest for some new recipes and found some great new ideas. I will let you know which ones we choose and how everything turns out!

New Recipe: Herbed Turkey Cheddar Meatballs

I have been trying to cook at least one new recipe a week to keep us from getting bored with our usual menus. Thank goodness for Pinterest to keep good ideas coming! I found this recipe and it sounded delicious so I knew I had to try it. I don't really make any other meatballs except my Italian meatballs so I thought it would be something different. I made them for lunch last weekend and they were a hit! They have great herb flavor, a hint of honey mustard and the crispy cheese crust is really yummy!

Ingredients
1 lb ground white turkey meat
1 egg
2 tbsp plain dried breadcrumbs
1 small sprig of rosemary, leaves stripped and minced
1 tsp tightly packed minced thyme leaves
1 tbsp minced flat leaf parsley
2 cloves of garlic, peeled and minced
1 tbsp dijon mustard
2 tbsp extra virgin olive oil
1/2 tsp of sea or kosher salt
10 grinds of freshly ground black pepper
3-3.5oz cheddar cheese, shredded
OPTIONAL: extra shredded cheddar cheese to top meatballs with
Directions
1. Preheat your oven to 350ยบ.
2. In a large bowl, combine all the ingredients except for the extra cheddar, if using.
3. Mix well with your hands until all the ingredients are well combined and incorporated.
4. Grab a baking sheet and line with aluminum foil
5. With your hands, begin shaping meatballs by rolling the meat mixture together into a ball shape.
6. Place the balls on the lined baking sheet, you should have about 12 total.
7. If you’re using the cheddar, top each ball with a pinch of shredded cheddar. This creates a ridiculously good cheesy crust over the meatballs!
8. Bake in the oven for 30 minutes, until the cheese is golden brown and melted.
9. Enjoy!

Ethan loved them!

Weekend Recap

We had another pretty low key weekend. On Friday it was freezing out so I chilled at home with Ethan. We did about 5 crafts, played in his fort, built blocks and played with just about every toy he owns! I think we will be venturing out next week no matter how cold.

Friday night we just relaxed, I worked on some Etsy orders and then we called it a night.

On Saturday, we got up and I made Michael his favorite blueberry muffins for breakfast and Ethan even helped!

Saturday afternoon we got ready to head out to a family party celebrating four of my cousin's boys birthdays. Ethan was looking very dapper thanks to Grandma and Papa!

We had a great time at the party. Ethan had fun playing with all of his cousins and it was nice to just hang out with my family.

On Sunday we got up to about 3 more inches of snow, ugh, when will it end?

We had some breakfast and then went out to Whole Foods to do our grocery shopping for the week. After grocery shopping, I did a craft with Ethan and we just hung out, played and watched some Daniel Tiger of course!

Sunday night Michael made us some steak, chicken and veggie kabobs for dinner and it was so yummy!

I hope all of you had a great weekend and a good week ahead!
